Wild Rice Pudding

Wild rice, traditionally used in savory dishes, develops complex flavors with maple syrup, including vanilla, toasted nuts, and a floral flavor. 

Pair with fresh fruit, such as berries or chopped apples or bananas, for a healthy dessert option. 

Ingredient 1/2 c. wild rice 2 1/2 c. water, plus more for soaking rice – Kosher salt

Ingredient 1/4 c. chia seed 1/4 c. plus 1 tablespoon maple syrup, divided, plus more for serving – Fresh berries, for serving – Sunflower seeds, for serving


1. Soak wild rice in cold water for 15 minutes.  

2. Rinse rice in strainer. 

3. Boil 2 cups of water and a pinch of salt in a medium sauce pan. 

4. Cover and cook on low for 25-30 minutes, or until rice opens. Add extra water if needed. 

5. Cool for 10-15 minutes before blending. 

6. Bloom chia.
